Locally sourced and untreated food available all year. Sustainable urban nurseries such as GROWx are, according to director John Apesos, the solution to the world's food shortage. 'We are a mini-nursery with the approximately 100 species that we now grow', he says. Every week, the start-up supplies around 2,000 plants to some thirty customers, including The Duchess, Hotel Arena and the Conservatorium Hotel. Apesos is a graduate of the MBA programme at RSM.
